Banana Bread
Moist, sweet, irresistible, delicious with all the right ingredients to make sure you have 0% guilt when eating 1 (or 2) slices of this perfect addition to your snack collection for the week.

INGREDIENTS:
4 very ripe large bananas (about 1 ½ cups mashed -340g)½cup plain or vanilla Greek yogurt (adds moisture without heavy oils)
115g honey ,
75g diced dates,
3 tablespoons of milk,
2 large eggs, room temperature
1 tsp pure vanilla extract
2 cups whole wheat flour or oat flour
1 tsp baking soda
½ tsp ground cinnamon
½ tsp salt
30g protein powder
Optional add-ins: ½ cup chopped walnuts or dark chocolate chips

DIRECTIONS:
- Prep the Oven: Preheat your oven to 175°C (350°F) and grease a 23x13cm loaf pan.
- Mash the Bananas: In a large bowl, vigorously mash the bananas with a fork until almost liquid.
- Combine Wet Ingredients: Whisk in the Greek yogurt, honey, eggs, and vanilla extract, milk until smooth.
- Add Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Add chocolate and dates. Gently fold the dry ingredients into the wet mixture until just combined. Do not overmix, or the bread will become dense. Fold in your nuts or chocolate if using.
- Bake: Pour the batter into your prepared pan. Bake for 30-40minutes, or until a toothpick inserted into the centre comes out clean.
- Cool: Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. (Or eat it straight away like we do.)
